Another interesting visit was to a soba factory. The Nagano area is famous for it's soba noodles. In these pictures you can see how these noodles are made by hand.

First the soba flower is blended in hot water and kneaded to the proper consistancy.
The soba dough is rolled, over and over, until it reaches the proper thickness. It is then folded in preparation for cutting into noodles.
The noodels are cut by hand with the cleaver-like knives.
